Fresh Apple Cake
Core, peel and coarsely chop:
4 cups of chopped apples
Place chopped apples in a large mixing bowl. Add, and stir. The batter will be very stiff, just keep on stirring. Eventually the juice from the apples will seep into the batter which makes it a little more moist.
2 eggs
1/2 cup salad oil
1 1/2 cups sugar
2 teaspoons cinnamon
1 cup chopped nuts
2 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
It will appear that you have more apples than batter. That is perfect! The apples will cook 'down' and the batter will 'rise'. The result will be delightfully pleasing.
Pour into a greased and floured baking pan. Bake at 350 degrees for 50 minutes or until an inserted toothpick comes out clean.
