Equipment: Barbecue, adjustable depth barbecue grilling basket.
Slice into 1/4" rounds
3 large oranges, unpeeled.
Arrange half of the the orange slices on the bottom of the grilling basket.
Rinse and pat dry
4 salmon steaks, or
2 - 10" salmon filets
Sprinkle both sides of the fish with
ground nutmeg
Place orange slices on top.
Close basket and adjust height to hold the contents snuggly.
Grill on barbecue for 30 minutes at medium heat, turning occasionally.
Serve with honey/mustard sauce.
Blend together:
4 Tablespoons honey
4 Tablespoons Dijon mustard
2 Tablespoon olive oil
1/4 teaspoon orange extract
1/4 teaspoon ground nutmeg
Note: This can be baked in a covered dish at 350 degrees for 30 minutes.
