Peach Cobbler
(or other fresh / frozen fruit of your choice)

Heat oven to 350o F.

Place into a saucepan, mix well and bring to a boil.
Simmer for 10 minutes. Remove from heat:

  4 cups peeled, sliced peaches
     (I used two 16oz bags of frozen sliced peaches)
 1 cup sugar
 1/2 cup water

Into a 3-quart baking dish, place into oven until melted:

 1 stick butter

Mix together, slowly to prevent clumping, then pour over the melted butter. Do not stir.

 8 tablespoons butter
 1 1/2 cups self-rising flour
 1 1/2 cups milk

Spoon fruit on top of batter, gently pouring in syrup.
Sprinkle top with

 Ground cinnamon, optional

Bake for 30 to 45 minutes.
Batter will rise to top during baking.

To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream.
